Rocio is passionate about promoting Mexico's cultural heritage, whether it be cooking traditional regional cuisines or learning about diverse folk art and dances. She is originally from Morelia, lived in Sonora for twelve years and has now been in Puebla for many years. An accomplished home-cook, she has mastered regional recipes from each place she has lived, but takes particular pride in her typical Poblano dishes. Rocio, her husband, Victor, and their daughter, Paulina, look forward to welcoming you in their comfortable family home in central Puebla! Enjoy a meal of typical Mexican family-style dishes at Rocio's table. She might prepare Poblano cuisine or feature dishes from other parts of her diverse country. Some of Rocio's specialities include the famous mole poblano, tinga de pollo (shredded chicken cooked in a tomato-onion sauce), pipian verde (chicken smothered in a pumpkin seed and tomatillo sauce), and hand-made tamales stuffed with regional ingredients. For dessert she might prepare a traditional sweet made by stewing fruit or sweet potatoes in syrup. Rocio prepares inventive vegetarian cuisine (including tacos de jamaica - tacos stuffed with hibiscus flowers topped with Oaxacan cheese) so please be sure to let her know if you have any dietary restrictions. If you book a cooking experience, join Rocio in her kitchen to learn to prepare two or three home-style Mexican dishes. You can expect to cook for an hour before you share your meal together. Rocio also offers and optional market tour add on, during which she will take you to La Cocota Market where she will teach you about local produce and traditional Mexican ingredients that are available. Please note that Rocio and her husband Victor do not speak English, but will arrange for a family member to translate during your experience together.
